Eggless pancakes

One of the mornings that Jaime was here, I made egg less pancakes! Jaime asked for seconds so they must not have been all too terrible. Although she did say the "syrup can help everything." Ha!
Did you know that you can substitute any of the following for each egg in a recipe:
  • 1 tsp baking power, 1 tblsp liquid, 1 tblsp vinegar
  • 1 tsp yeast dissolved in 1/4 cup warm water
  • 1 tblsp of apricot puree
  • 1 1/2 tblsp water, 1 1/2 tblsp oil, 1 tsp baking powder*
  • 1 packet plain gelatin, 2 tblsp warm water. Do not mix until ready to use
I used the one with the star by it for my pancakes, and they were pretty good. Of course, Isaac barely ate them anyways. But Elijah chowed on them. And Scrubs made a meal of them when I left the kiddie table unoccupied for a few moments. I knew it was Scrubs that finished them off since he left all the strawberries I had served with the pancakes. The dog likes everything but strawberries. Go figure!

While we don't make a lot of baked goods, it sure is nice to know that Isaac can still eat basically anything -- just with a few adjustments.
