I need your help!

Next week, my dear friend Tiffany is going to have a "cookie exchange" for our weekly wive's brunch. I got the rules, and I can't make chocolate chip. That's a rule!!! And I can't make generic cookies either. I need something unique!

Right now my leading thought are snicker doodles. I love those!! But I remember that they are hard to make. My mom and I tried it one year and they gave us fits. Does anyone have a good idea of a cookie that is NOT HARD TO MAKE that I could take with to the cookie exchange?

Remember: something "unique" and something NOT HARD. If it is "not too hard" it will be too hard for me. Trust me on this one.

Oh and if they have chocolate in them, even better.

SECRET KISS COOKIES

1 c. butter, softened
1/2 c. sugar
1 tsp. vanilla
1 3/4 c. unsifted flour
1 c. finely chopped walnuts or pecans
1 (6 oz.) pkg. milk chocolate kisses, about 36
Confectioners' sugar

Cream butter, sugar and vanilla in large mixing bowl. Gradually add flour and nuts; chill dough about 1 hour or until firm enough to handle.
Heat oven to 375 degrees. Mold approximately 1 tablespoon dough into a ball and flatten. Wrap around a chocolate kiss. Bake for 15 minutes. When cool, roll in confectioners' sugar.

Wendi--This is Jason, Josh & Justin's cousin, remember NY? Well I have been reading your blog now for sometime now & I never did a post. Need a recipe for Easy snickerdoodles? Get Pillsbury sugar cookie dough. Roll into balls. Roll into a cinnamon mixture of equal amounts of cinnamon and sugar. Bake according to directions on cookie wrapper.

I promise nobody will know they aren't home made.

Are you wanting something easy? Does it have to technically be a cookie or can it be candy-ish? Here's more of a candy.

PECAN CARAMEL CANDIES

Mini pretzel twists
Rolos
Pecan halves

Line baking sheet with foil (shiny side up) or with parchment paper.
Place pretxels on pan. Top with one Rolo. Place in 250 degree
oven for 4 min. Immediately place pecan half on each candy and press.
Refrigerate until set.

Here's the best roll-out cookie dough I've ever had.

ROLL-OUT COOKIE DOUGH

1 cup butter
2 tsp. baking powder
1 cup. sugar
1 tsp. vanilla
1 egg
3 cups flour

In large bowl, cream butter and sugar. Add egg and vanilla.
Add baking powder and flour, one cup at a time, mixing after each addition.
The dough will be stiff. Blend in the last flour by hand (or if you have a dough
hook on your mixer you can use that). Do not chill. Divide dough into 2 balls.
On floured surface, roll each ball into a circle 1/8 in. thick. Dip cutters into flour before each use.
Back on ungreased cookie sheet for 6-7 min. at 400 degrees or until cookies are lightly browned.

You can use that dough for using cookie cutters or if you want to incorporate choc. then you can take a mini muffin pan and fill each muffin cup about 1/2 to 3/4 way with dough. Bake according to the recipe. When you pull them out of the oven, immediately press one Hershey's Kiss or bite size Reese's Peanut Butter Cup into the center of the cookie. Let cool completely before removing the cookie. Sticking them in the fridge helps speed the cooling.(This works really well with choc. chip cookie dough too).

These are super quick and easy, and look "Christmasy" (is that even a word!?) They look like little wreaths and are always a hit. They're fun to make with kids.
INGREDIENTS
1/2 cup butter
4 cups miniature marshmallows
1 teaspoon green food coloring
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups cornflakes cereal
1 (2.25 ounce) package cinnamon red hot candies
DIRECTIONS
1. Microwave marshmallows and butter on High for 2 minutes. Stir, then microwave on High for 2 minutes more. Stir. (This can be done in a double boiler if one doesn't have a microwave.)
2. Add and mix quickly the coloring, extracts, then cornflakes. Drop by spoonfuls in clumps on greased wax paper and decorate with 3 red hots each.
3. Once cool, transfer to lightly greased serving/storage tray with lightly greased fingers.
*Experiment with the almond flavoring...you may want less.
*When you "drop in clumps" I try to shape like wreath by pushing in the center so there is a little hole/center to my wreath.

You can buy a mix in the baking aisle at the supermarket for snickerdoodles. It's really easy.

CUTE AND EASY CHRISTMAS COOKIES
Wendi, go to the Pillsbury website. They have lots of fun, fast, easy recipes that I have used for cookie exchanges. No one ever knew I "cheated" and used the pillsbury dough...until they asked for the recipe! Have fun!!!

My Grandma used to make those Corflake Christmas wreaths for All of us growing up and she has been in Heaven for almost 10 Years now, And I AM SO excited that I saw the receipe for them !!!How cool, It brings back suck great memeories, my mom used to pack the "left overs" in our lunches, i acan picture them now:-) Yeah, I will make them this year

Toffee Bars

1cup packed browm sugar
1cup butter, softened
1 egg yolk
1 tsp. vanilla
2cups flour
1/4 tsp. salt
12oz.chocolate chips
chopped pecans

Mix by hand, first 4 ingredients.Add flour and salt and mix. Press into a greased 9x13 pan. Bake at 350 for 20-25 minutes., until golden brown. Sprinkle 1/2 -2/3 bag of chocolate chips on hot bars. Turn oven off and place back in about 2 minutes, until chocolate is melted. Spread with knife and sprinkle chopped pecans on top. Let bars cool first,cut into squares. Enjoy!!
