We decided to process a lamb ourselves on the farm the other day. We use a local processor, but it costs $75 to get a lamb done ... and, we think it important to "remember" how to do it and practice skills in case we didn't have a processor.
It took most of the day, but in the end, lotsa meat in the freezer -- and education for the four youngest currently living at our home.
